Easy Rice a Roni Salad Without Chicken
Easy Rice-a-Roni Chicken Salad is so flavorful and perfect for any gathering. It's our favorite way to enjoy chicken salad!
Serve Rice-a-Roni Chicken Salad scooped up inside a Homemade Dinner Roll with a bowl of Brussel Sprout Salad at any function or gathering. It's a fun variation on our classic Chicken Salad recipe!

This quick and easy Rice-a-Roni Chicken Salad is a recipe my family has been making for a reaaallllly long time! We couldn't remember where we got the recipe, but only know that everyone loves it.
We especially love to make these Rice-a-Roni Chicken Salad sandwiches for get togethers, potlucks, bridal and baby showers…you name it!
It's a very simple recipe to make and is a great "chicken salad" recipe to make for parties and goes great with a fresh salad. It is also a great lunch idea and stores well (if there are any leftovers). Because of that, we make it pretty often.
You can use rolls from the store if you are short on time. However, to make this recipe extra phenomenal I paired it with our Homemade Dinner Rolls. Either way you make it, it's sure to be a hit!

Just Mix and Season!
MIX. Make RICE-A-RONI as directed on box. Add drained can of chicken. Mix together in a bowl.
SEASON. Add mayonnaise and lemon pepper and mix well.
Add to warm rolls and ENJOY!
Serving Options:
Chicken salad is often served on bread. We particularly like it on a croissant roll. Some other ways to eat this yummy salad include:
- Add a cup of it on top of a bed of lettuce
- Inside a pita
- Inside lettuce wrap
- Wrapped in a tortilla or inside a quesadilla
- Scoop it with crackers or chips
- Straight out of a bowl with a fork
Variations + SToring Info
Feel free to change up the ingredients and flavors to your liking. Here are some other ingredients you could try:
- Curry powder
- Chopped celery
- Chopped bell peppers
- Parsley
- Cilantro
- Salsa
- Pesto sauce
- Chopped water chestnuts
- Grape tomatoes
- Slices of lettuce
STORE leftovers in an airtight container. Leftovers of this chicken salad will stay good for up to 4 days in the fridge. I wouldn't freeze the leftovers because of the mayonnaise in the recipe. The mayonnaise will separate if heated up again from frozen.
Prepare this chicken salad about 3-4 days ahead of time. Prepare everything, mix it all together, and keep it covered in the fridge until you are ready to serve it.
